With an abundance of fresh mint, ginger, lime and garlic it has oodles of flavour with very little effort. Ingredient Notes - Mint leaves: Always use fresh leaves because the main flavor of the pudina chutney purely depends on the mint leaves. So discard the wilted and spoiled ones. Only use leaves and discard the stems. - Cilantro: Same as mint leaves, you want to use fresh leaves and not wilted.

Instructions to make Mint Chutney or Pudina Chutney:
  1. Heat oil in a pan, add cumin seeds, urad dal and chana dal. Once it's lightly browned, add the chilies, tamarind and onion.
  2. Saute till onion becomes soft.Then add the mint leaves and saute till it wilts
  3. Finally, add the coconut and cook for a minute.
  4. Once the mixture is cooled down, blend to smooth paste along with salt using little water.
  5. Transfer in the serving bowl and add the temper. Serve with dosa, idli or paniyaram.

So discard the wilted and spoiled ones. Only use leaves and discard the stems. - Cilantro: Same as mint leaves, you want to use fresh leaves and not wilted. Use stems and leaves both in the chutney.
