  2. Prepare 2 Bay leaves
  3. Take 10 Sliced Cashews
  4. Make ready 1 1/2 tbsp Ghee / oil
  5. Make ready 1/2 tsp Shahi jeera
  6. Make ready 2-3 Cloves
  7. Make ready 2 Cinnamons small pieces

  9. Prepare 1/4 tsp Turmeric powder

  11. Take To taste Salt

  15. Prepare As required Veggies finely chopped -carrot,beans,potato, peas,tomato

  18. Prepare 1/2 cup Coriander leaves
  19. Make ready 3 Green chillies
  20. Get 1 inch Ginger
  21. Get 6-7 Curry leaves

  24. Prepare Some Fried cashews

This Mint Rice recipe is my mom's version and she doesn't add any spices except cumin seeds and turmeric to make this flavorful mint rice. This is vegan, quick, delicious and requires only a few ingredients.

Instructions to make Pudina Rice:
  1. Rinse rice,and soak in water
  2. Chopped all the veggies finely and keep it a side.
  3. Grind mint leaves, coriander leaves, ginger, green chillies and ginger together adding some water
  4. Heat ghee in a cooker or any heavy bottom vessel, add shahi jeera, bay leaves, cinnamon, cloves in it and stir it. Add cashews in it and fry it now add veggies in it and stir it again add salt and turmeric powder.
  5. Now add mint paste in it and mix it well. Cook it for 1-2 minutes. Add curd, sugar, garam masala,cumin powder mix it well.
  6. Now add rice (removed from water) and saute it for 1-2 minutes. Add water 2 to 3 cups or as needed. When water started boiling add crushed fennel seeds.
  7. Cover with lid and cook till 2 whistles on low flame. when cooker cools down open lid and add lemon juice in it (optional)
  8. Serve hot with onion / cucumber raita.
  9. You can also add garlic and onion in it if you like. Add garlic while grinding mint leaves and add onion with veggies.
