Allow to cool and drain the excess water completely. Fry coriander seeds, red chillies and grind to a fine powder. Heat the remaining oil and add cumin seeds. Over a medium flame place a pan and dry roast coriander powder.

  1. Pre preps are : coriander pastes and cooked rajama paste.First pressure cook rajma for 6 whistles. Then make a paste of coriander,pudina,ginger,tamarind and green chilli and transfer to a bowl and keep aside.Now in the same jar blend cooked rajama with pinch of salt to a coarse paste and keep aside.
  2. In a pan heat oil add the kada masala first (cloves,cardamom,bay leaf, cinnamon) sauté for a bit then add turmeric powder hing and sauté again. Now add coriander pudina paste cook well. Now add all dry masala with water cover and boil for one min.
  3. Then comes the rajama paste and boiled mashed aloo with little rajama water if left and cook for two mins. Once cooked add cooked rajama mix well cook on simmer for two mins.

Heat the remaining oil and add cumin seeds. Over a medium flame place a pan and dry roast coriander powder. Once the potatoes are boiled, drain the water and keep them aside allowing it to cool. Then peel their skin and mash them well. For stuffing: In a bowl, add coriander powder, onions, mint leaves, coriander leaves, and mashed potatoes.
