The ingredients needed to make Spring Rolls:
  1. Get 4 garlic cloves​
  2. Prepare 1 thumb of fresh ginger​ (or a teaspoon of dried)

You can make it in advance, and deep-fried directly from the freezer. Originating in southeast Asia, spring rolls are a popular bite of fresh vegetables sliced into matchsticks and wrapped in rice paper. (I love how the wrappers are translucent, so you can take a peek at the colorful flavors inside!) Typically served cold alongside a dipping sauce, they're crispy, crunchy and delicious. To make the spring rolls: Bring a pot of water to boil and cook the noodles just until al dente, according to package directions. Drain, rinse them under cool water, and return them to the pot.

Instructions to make Spring Rolls:
  1. Dice the courgette, onions, carrot, pepper, and slice the spring onions.
  2. Heat the oil in a wok or pan. Stir fry the courgette, onions, carrot, pepper, spring onions, garlic, ginger, and chilli for 5-6 mins.
  3. Set aside and add the Chinese lettuce.
  4. Spoon the mixture (about 2 tablespoons) into the corner of a pastry sheet. Roll and tuck in the sides.
  5. Mix together the cornflour/arrowroot and water. Seal the roll like an envelope with this water/cornflour mixture.
  6. Fry each roll in hot oil for 3-4 mins.

To make the spring rolls: Bring a pot of water to boil and cook the noodles just until al dente, according to package directions. Drain, rinse them under cool water, and return them to the pot. Off the heat, toss the noodles with the sesame oil and salt, and set aside. How to make Fresh Spring Rolls: Assemble all of your ingredients together, including the chopped veggies, cooked chicken or shrimp, noodles, herbs, and rice paper wrappers. Chop all of your vegetables into long, thin slices.
