Using a sharp knife, cut each length of pastry into eight even-sized sausage rolls. Make two small slits in the top of each one, taking care not to. Put half the olive oil in a large frying pan and add the leeks along with a pinch of salt. Scrape the leeks out of the pan and into a bowl.
