With a wooden spoon pull the mixture together until it forms a soft dough. Add butter, and pulse until mixture forms a coarse crumble. Add prosciutto, cheese, and rosemary; pulse to combine. Fry the cubetti di pancetta until crisp and golden then remove from the pan with a slotted spoon and drain on kitchen paper. Rub the butter into the self raising flour until it resembles breadcrumbs.
